My “quickie” sausage soup multi vegetable recipe
1 pack of either turkey or pork Italian sausage (or smoked beef sausage)
1 can of black beans
1 large pack of mixed frozen vegetables (with corn, carrots, green beans, etc.)
One pack of frozen black eye peas (optional)
1 can of chunky chicken noodle soup (lower sodium, if available) (Optional)
2 bay leaves
Dash of Italian seasoning
½ diced red bell pepper (can cook in microwave for about 3 minutes, to give it a roasted flavor)
½ diced jalapeno pepper (if you like spicy food)
½ diced onion
Dash of garlic powder
Splash of Extra Virgin Olive oil
First add sausage, cook about 5 minutes
Then add the frozen vegetables - cook with sausage about ten minutes
Dice the red bell pepper, jalapeno pepper, onion and add to mixture, along with olive oil and bay leaves.
Then add black beans, chunky soup, Italian seasoning and garlic powder and remaining ingredients.
I usually slow cook this soup, for about 2 hours.
This is very good, served with hot cornbread.
It is filling, nutritious and great, anytime of the year.
You can also season the soup, according to personal taste buds.
